Application

Automatic system for managing the extraction and introduction of air in professional kitchens.
Allows the ventilation flow rates to be controlled by comfort and hygiene parameters (temperature and relative humidity) for ideal air quality.
Allows to reduce air flow rates, motor power consumption and energy consumption related to air heating. (Energy savings from 40 to 70% according to on-site studies carried out by EDF).
Improves staff comfort and therefore productivity, by limiting exposure time to noise and air currents which are sometimes significant at high speed.

VORAX® ECO COOKING

The VORAX® ECO CUISSON system consists of controlling an extraction fan associated with a compensation CTA, from relative humidity probes positioned on the front of the hoods and one or two temperature probes placed in the kitchen. The flow rate variation is linear according to the temperature change as long as the humidity is below the set threshold. When the humidity exceeds the set value, the system gives it priority and switches to maximum speed.

User Command
  • COML Local order.
    • Compact IP55 box positioned in the kitchen, grouping together the functions required by the user: Stop / Automatic start / Minimum or maximum flow rate forced / Smoke extraction punch.
Measure
  • SHUR IP65 electronic humidity probe:
    • 1 to 12 probes to be positioned on the hood/ceiling, near high clearance devices.
    • Adjustable from the CTCF box, management of 1 or 2 zones.
    • Adjustment range from 30 to 90% relative humidity.
    • Dimensions: L x H x D = 165 x 80 x 42 mm.
  • STEM IP65 electronic temperature probe:
    • 1 or 2 probes to be positioned in the kitchen area.
    • Adjustable from the CTCF box.
    • Adjustment range from 15 to 35°C.
    • Dimensions: L x H x D = 81 x 96 x 49 mm.
Treatment
  • CTCF IP55 information centralization and processing box:
    • To be placed in the technical room.
    • Logic module with backlit display for viewing measurements and modifying probe setpoint values.
    • Transmits a run command and a 0-10 volt setpoint for controlling flow modulation.
    • Gas solenoid valve info report - contact open when the box is safe.
    • The box provides power to external components, probes + control boxes, at very low voltage 24V.
    • Serial Modbus TCP/IP communicator.
Modulation
  • The information transmitted by the CTCF makes it possible to adjust the operating point of the fan and the compensation unit within a minimum-maximum range in the case of:
    • From a single-zone system ASR ECOWATT, combining an extraction fan ASR with a ECOWATT regulated CTA
    • From a multi-zone system ASR2 ECOWATT, combining 2 extraction fans ASR with a ECOWATT regulated CTA and variable flow boxes RESS / REVA.
    • From an AC exhaust fan driven by a frequency inverter VFTM/VIFK associated with a ECOWATT regulated CTA.

VORAX® ECO LAUNDRY

The VORAX® ECO LAVERIE system consists of controlling 1 or 2 single-phase AC or ECM fans by a speed regulator, based on data transmitted by a relative humidity probe positioned on the front of the hood. The flow rate varies linearly according to changes in humidity.

  • SHUR IP65 electronic humidity probe:
    • Probe to be positioned inside or outside the hood.
    • Dimensions: L x H x D = 165 x 80 x 42 mm.
Control/Processing/Modulation
  • VRPZ Speed regulator for AC motor or ECM:
    • Adjusts the speed of single-phase fans within the min-max operating range.
    • AC motor: voltage variation range 110 – 230 Vac.
    • ECM Engine: Signal variation range 3-10 Vdc.
    • Directly receives the 4-20 mA signal from the probe.
